Compare kimchi costs for the amount you will actually eat

A box of cabbage and a package of finished kimchi do not represent the same edible quantity.
Trimming, salting and draining change cabbage weight, while radish and seasoning add weight to the finished batch.
Some finished kimchi may also go uneaten, so purchased kilograms and kilograms served at the table can differ.

This homemade vs packaged kimchi calculator starts with household consumption and works backward to ingredient purchases.
It then calculates how many whole packages meet the same target and compares the cash needed, including delivery.
Use it for a shared family kimjang batch, a smaller household order or a decision to buy instead of preparing kimchi yourself.
Both language versions use the same formulas, with kilograms, grams and Korean won (KRW); no exchange-rate conversion is applied.

Match the input meanings and units

Intake, period and expected waste

Daily intake means grams per person, not the daily total for the whole household.
Every planning month uses exactly 30 days; this is a budgeting convention rather than a calendar or safe storage limit.
Homemade and packaged waste rates describe the share of finished kimchi you expect not to eat.
Preparation losses such as discarded outer leaves belong in yield, so do not count them again as finished-product waste.
Default intake is not a dietary recommendation.

A recipe based on drained cabbage

Cabbage yield is the weight entering the final kimchi divided by the purchased weight.
For raw cabbage, include trimming, salting and draining losses; for purchased pre-salted cabbage, include only further losses after purchase.
Purchased cabbage of 20kg becoming 16kg of drained cabbage has an 80% yield.
An ingredient ratio of 25% means 25% of drained cabbage weight, not 25% of the finished batch.
Thus 16kg of cabbage plus 4kg of other ingredients produces 20kg of finished kimchi in this model.

Prices for the purchased condition

Use the price per purchased kilogram before preparation losses.
A lower radish yield increases the purchased quantity needed for the same prepared weight.
Enter ready-made seasoning as one combined row, or enter its ingredients separately.
Do not include both a seasoning total and its component ingredients.
Discarded brine and washing water do not add to finished weight; include the cost of salt used in other cash expenses.

Work backward from edible demand

Target edible weight D = sum of people × daily grams × 30 × months ÷ 1,000

Homemade finished weight F = D ÷ (1 − homemade waste percentage ÷ 100)

Drained cabbage B = F ÷ (1 + sum of other ingredient percentages ÷ 100)

Cabbage purchase weight = B ÷ (cabbage yield percentage ÷ 100)

Other ingredient purchase weight = B × (ingredient ratio ÷ 100) ÷ (ingredient yield ÷ 100)

Multiply each purchased quantity by its quoted price per kilogram and add the costs.
Drained cabbage plus prepared ingredients equals the required finished weight in this model.
Any additional preparation loss must be reflected in your measured yields and recipe assumptions.
Removing every ingredient row produces a cabbage-only weight model, not a recommended kimchi recipe.

Whole packages and two per-kilogram measures

Round package count upward

Required packages = ceil[D ÷ (package kg × (1 − purchased waste percentage ÷ 100))].
The count rounds up to cover target intake after expected waste.
Purchase cash = package count × package price + shipping for the whole order.
Shipping is added once; if the seller charges per package, enter the combined shipping amount yourself.
Free-delivery thresholds, coupons and order discounts are not determined automatically.

Target intake versus surplus inventory

Cash per target edible kg divides cash outlay by D, the same target for both options.
This is the main comparison of the money required to meet your consumption plan.
Cost per all edible purchased kg instead divides the packaged order cost by all purchased edible weight after waste.
Whole packages may leave surplus, making this second unit cost lower without reducing the cash you must pay.
Surplus is not deducted as a refund or resale credit.

Worked example: 18kg for four people over three months

These prices and yields are fictional assumptions, not current market prices or official averages.
Four people × 50g daily × 30 days × three months gives 18kg of target intake.
At 10% homemade waste, prepare 20kg of finished kimchi.
With other ingredients at 25% of drained cabbage weight, that requires 16kg of drained cabbage and 4kg of prepared ingredients.

Homemade option

An 80% cabbage yield requires 20kg purchased at KRW 2,000/kg, costing KRW 40,000.
Other ingredients have 100% yield and cost KRW 10,000/kg, adding KRW 40,000.
Other cash expenses of KRW 20,000 bring cash outlay to KRW 100,000.
Six unpaid person-hours valued at KRW 10,000/hour add KRW 60,000, producing a total of KRW 160,000 including time.

Packaged option

A 5kg package costing KRW 40,000 yields 4.5kg after 10% expected waste.
Four packages cover 18kg of intake.
Adding KRW 5,000 total shipping gives cash outlay of KRW 165,000.
Homemade saves KRW 65,000 in cash, but only KRW 5,000 after unpaid time is included.
Cash per target kg is KRW 5,555.56 homemade and KRW 9,166.67 packaged.

If packaged waste alone changes to 0%, four packages still cost the same but leave 2kg of surplus.
Cost per all edible purchased kg becomes KRW 8,250, while cash per target kg remains KRW 9,166.67.
Alternatively, reducing only the other-ingredient yield to 50% requires 8kg purchased, raising homemade cash to KRW 140,000 while finished weight remains 20kg.

How to prepare and save a family plan

  1. Set people and the consumption period.
    Replace example intake with your household records.
    Use separate rows for families that eat at home at different rates.
  2. Check the recipe and quote units.
    Enter cabbage yield and ingredient ratios.
    Convert box or bag prices to price per net purchased kilogram before entering them.
  3. Add overlooked costs and unpaid work.
    Include delivery, containers, used salt and paid help in other cash expenses.
    Only unpaid person-hours belong in the separate time-value calculation.
  4. Confirm the purchase quote and storage.
    Record net package weight, price, total shipping and an optional quote date.
    If the whole batch exceeds storage, plan distribution or separate orders yourself.

Limited refrigerator space

If actual storage holds 15kg and either option brings in 20kg, the calculator shows 5kg of excess for each.
All packages are assumed to arrive together.
Separate orders require another comparison with the applicable delivery fees, discounts and quantities.
Refrigerator litres are not automatically converted to kilograms; container shapes and usable space must be checked directly.

Cash savings but substantial work

Read cash and including-time differences side by side.
Hourly time value is your personal decision input, not a legal wage or a market standard.
Hiring help may reduce unpaid hours while increasing cash expenses, so change both inputs consistently with your actual plan.

Input boundaries and practical limits

  • Yield must be 0.01–100%, package weight 0.001–100kg and expected waste 0–99%.
    Zero yield or 100% waste cannot produce a finite purchase requirement.
  • The planning period accepts 0.1–24 months, with up to 10 households of 0–20 people and 0–1,000g daily per person.
    Up to 12 other-ingredient rows accept ratios of 0–100% each and purchased prices up to KRW 1,000,000/kg.
  • When every household has zero people or zero intake, no preparation or purchase is planned.
    Ingredients, packages, fixed expenses and time cost become zero; per-kg values are unavailable.
    Zero prices can represent ingredients or packages obtained free of charge.
  • Ingredient sales packs, reuse of leftover seasoning, transport between homes, refrigerator electricity and equipment depreciation are not automatically priced.
    Include relevant cash expenses consistently when comparing your options.
  • Expected waste is a user assumption, not a prediction of spoilage or food safety.
    The consumption period is not a safe storage period and does not determine whether kimchi is safe to eat, nutritious or desirable in taste.

Frequently asked questions

Does 20kg of pre-salted cabbage make 20kg of kimchi?

Not necessarily.
Further draining reduces weight while prepared ingredients add weight.
Enter the purchased cabbage yield and the ratio of other ingredients separately.

Is a 25% ingredient ratio based on the finished batch?

It is based on drained cabbage.
Adding 4kg of other ingredients to 16kg of cabbage is a 25% ratio and makes 20kg of finished kimchi.
Convert your recipe to this basis.

Why do the two purchased per-kg costs differ?

Rounding to whole packages may leave more edible kimchi than your target.
Cash per target kg uses the planned consumption as the denominator.
Cost per all edible purchased kg uses the larger available edible inventory.

Do preparation yield and waste count the same loss twice?

They describe different stages when entered correctly.
Yield covers purchased ingredients becoming prepared ingredients.
Waste covers finished kimchi that will not be eaten.
Do not enter discarded cabbage leaves in both.

Must family labor have a monetary value?

Time is shown separately and the hourly value may be zero.
Two people working for three hours means six person-hours.
Do not include help already paid for in unpaid time as well.

What if I eat the surplus next month?

It remains surplus edible weight for the current plan and is not deducted from cash cost.
Change the period or household demand if you actually plan to consume it later.
A longer period does not establish safe storage.

Does a storage excess reduce the shopping quantity?

No.
The calculator shows excess weight with everything prepared or delivered together.
Immediate distribution to families or staged deliveries must be planned separately, including their costs.

Where do the default prices and yields come from?

They are fictional arithmetic examples, not official averages or current prices.
Replace them with your quotes and measured recipe yields.
A blank quote date remains marked as not recorded in both the results and the saved file.
